Creamy mushroom pasta

A good staple. The taste is so famliar to me by now that it's a very comforting dish.

Ingredients

onion
garlic
pasta
cream or cream cheese (pref. soy)
champignons
parmesan
seasonings: parsley, s&p

Directions

  1. Boil pasta. Chop onions & garlic. Fry mushrooms in pan without oil.
  2. After mushrooms lost some water, lower heat and add oil, garlic & onion.
  3. Add a little bit of cream & pasta water until the sauce thickens. Season.
  4. Top with parsley & parm, serve with pasta.


Zucchini lasagna

This is a pretty quick lasagna with zucchini layers! Always delish.

Ingredients

1 onion
1 clove of garlic
3 tbsp tomato paste
1 can strained tomatoes
1 can chopped tomatoes
1 zucchini
lasagna sheets
grated cheese of your choice
100-160g minced soy meat
seasonings: thyme, oregano, basil, s&p

Directions

  1. Chop onion & garlic, fry in olive oil. Preheat oven to 200 deg celsius.
  2. Add meat, fry until done.
  3. Add tomato paste, sauté briefly, add both cans of tomatoes. Let the sauce thicken on medium high heat while stirring.
  4. Slice zucchini horizontally and as thin as possible. Season sauce with listed spices (a bit more salty than you would think probably because the zucchini waters it down a bit in the oven. Though i usually just put more salt later).
  5. Layer in form: sauce - lasagna sheets - zucchini (3x)
  6. LOTS of cheese on top!
  7. Bake for 35 min at 200 deg.


Hashbrowns with smoked salmon

A more recent obsession because I found an amazing vegan alternative to smoked salmon! Best combined with a fresh side like a salad or as a snack! I use my air fryer for this :)

Ingredients

hashbrowns (Röstiecken)
vegan smoked salmon slices
herb quark (or a dip of your choice)
seasonings: dill, pepper

Directions

  1. Fry or bake hashbrowns (in air fryer: 190deg, 17mins)
  2. Layer with dip, salmon, pepper, & dill! Done!


Vegan miso ramen

Great comfort food.

Ingredients

garlic
ramen noodles
soy milk/cream
vegetable stock
toppings:
veganes hack/tofu/soy crumbs
bok choy
spring onions
e.g. pea pods, mushrooms, corn, sesame seeds etc. (optional)
seasonings: paprika, sesame oil
broth base: soy sauce, miso paste, peanut butter, rice wine vinegar, chili oil

Directions

  1. Season minced meat alternative with sesame oil, soy sauce, miso paste and paprika. Fry in pan or air fryer until crispy.
  2. Wash bok choy (and other vegetables). Cut into desired size, chop garlic.
  3. Heat up bok choy in some oil for about 5 mins. Add garlic and fry until fragrant.
  4. In your ramen bowl, mix the broth base out of the ingredients listed above.
  5. Set up a pot for the broth, heat vegetable stock and soy milk.
  6. Prepare noodles; ideally in a separate pot.
  7. To serve: pour some broth into the ramen bowl and mix. Add noodles and more broth. Finish with toppings, spring onions and sesame seeds.



Vegan tofu cashew stir-fry

Ingredients

red onion
garlic
ginger
rice
tofu
bok choy
pea pods
bell pepper
baby broccoli
chashews
spring onions
sesame seeds
tofu seasonings: paprika, sesame oil, soy sauce, tomato paste
sauce: soy sauce, cornstarch, brown sugar, rice wine vinegar, water

Directions

  1. Wash and cook your rice of choice.
  2. Drain the tofu, crumble it in pieces or cut it neatly, and season with all the seasonings listed.
  3. Fry the tofu in either a pan or in the air fryer until golden.
  4. Chop garlic, onion and ginger and fry in a pan with some oil on medium heat until fragrant.
  5. Wash the vegetables, slice them into your desired size, and add them into the pan. Cook until tender.
  6. Mix the sauce in a small cup with the ingedients listed. Make sure the starch dissolves.
  7. Turn the heat of the pan to high and add the tofu and coat everything in the sauce. Lastly, add the cashews.
  8. Serve with rice and add some spring onions and sesame seeds on top if you want.
