Vegan chocolate chip cookies

YUM! I like them quite large, thin, and crisp on the outside while chewy on the inside.

Ingredients

112g vegan butter, softened to room temp
1 egg alternative (e.g. flaxseed + water, lemon + baking soda, etc.)
140g brown sugar
vanilla extract
1 pckg vanilla sugar
188g flour
1 tsp baking powder
2/3 tsp salt
120g vegan chocolate chips

Directions

  1. Preheat oven to 180 degrees celsius.
  2. Beat the butter, sugar, and vanilla sugar in a large bowl for 1-2 min until creamy.
  3. Add vanilla and egg alternative. Mix.
  4. Add flour, baking soda, baking powder, and salt. Mix.
  5. Lastly, add the chocolate chips and mix either by hand or using the mixer.
  6. Form dough into little balls. For me, the dough makes roughly 9 balls per baking sheet (2 in total).
  7. Bake for around 10 minutes. Ideally, just watch them until ready. Once they turn just slightly golden on the edges (they will look puffy, light, and underbaked but they won't be!) take them out. Let them cool for about 5 mins before eating so they don't fall apart :)
